A Wedding Menu for every Season!

Every season has its highlight and when it comes to food, well what best than go seasonal! It’s difficult to go wrong as each ingredient is carefully selection because it’s in its peak, a very good start to ensure top quality. But choosing the perfect wedding menu based to the season in which a wedding is hosted, it’s not always as straight forward as it seems.

Here are our three menu ideas to help you select the perfect one to reflects the vibes for each season and to celebrate the in-season key ingredients.

 

Spring/Summer

Apulian Burrata with Sicilian Datterini salad and basil, bread croutons.

Nocellara Green Olives & Taralli

Sicilian Sardines “Beccafico” or Polpo and potatoes salad with Taggiasca olives

Mains

Paccheri di Gragnano IGP with King Prawns, sautèd sweet cherry tomatoes, Sicilian Pistachio pesto

Sea bass fillet roll filled with sundried tomatoes, olives and almond flakes, served with roasted asparagus

Mini Sicilian Cannoli with ricotta, chocolate and pistachios

Vanilla Pannacotta and fresh berry sauce or Summer Tiramisù

The Drink:

Hugo Spritz  - Prosecco, Eldeflower cordial, soda, ice. Garnish: fresh mint and lime

The Wine:

Sparkling – Ferghettina Brut, Franciacorta, Lombardy

White – Donnafugata Anthilia, Marsala, Sicily

Red – Etna Rosso DOC Le Sabbie dell’Etna 2018 Firriato, Sicily
